Nothing says easy entertaining quite like a one-tray bake, particularly one which incorporates seasonal elements! Our personal favourite is baking asparagus as this offers a totally distinct flavour to steaming it.

Additionally, this recipe can easily become vegan by swapping out the chicken thighs for an undrained jar of Daring Bean White Beans after cooking potatoes for 20 minutes.

That is how to prepare an Early Summer Hen Tray Bake and serve it to 4 or 2 with leftovers for easy entertaining during this summer season, plus vegan-friendly swap: pour one can of Daring Bean White Beans over cooked potatoes after 20 minutes have elapsed for optimal results.

8 chicken thighs with skin on (bone in or out, as desired). Also needed are 800 grams of Jersey Royal potatoes cut into halves according to size; three tablespoons of extra virgin olive oil is optional and 350 radishes; some cut half and left whole; 250 grams asparagus; several oregano sprigs and basil leaves from your garden, freshly cracked black pepper for seasoning, as well as several cups of freshly milled black peppercorns (both optional).

Methodologique Preheat the oven to 200degC and combine chicken thighs, jersey royals and 2 tablespoons of additional virgin olive oil on an enormous baking tray; season as required and roast for 20 minutes before adding radishes for another 10 minutes in the same manner.
After 10 minutes, add asparagus and oregano, then continue the assembly for another 7-8 minutes – taking care that all components such as chicken, potatoes and radishes become golden-brown in colour while asparagus remains tender and crunchy.
As your chicken tray bake is baking, mix the shallot with red wine vinegar and olive oil in an old pot until all liquid has been consumed. Meanwhile, slice tomatoes roughly for varied sizes and textures and season them lightly with salt for enhanced flavors.
Once ready to enjoy, decorate the hen tray bake with basil leaves before pouring the shallot dressing over tomatoes and scattering parsley on top. Season to perfection before tasting your creation – and take time to savor every morsel!
