Now, homemade with dried chickpeas, enveloped in waves of green parsley and cilantro, and topped with tahini sauce, every bite is a Mediterranean melody—rich in plant-based protein, a secret joy for vegetarians.

The Health Benefits of Chickpea

Chickpea Chickpeas, like other legumes, are packed with fiber and protein, carrying vitamins and minerals to protect your gut and blood sugar. Green herbs add antioxidants, and tahini sauce is smooth yet not greasy. This chickpea not only delights your taste buds but also quietly builds a strong foundation for your health.


Ingredients List (Serves 2-4)

Chickpea Cakes

  • 250g dried chickpeas
  • 1/2 tsp baking soda
  • 1 onion (sliced)
  • 3 cloves garlic
  • A large bunch of parsley (50g)
  • A small bunch of cilantro (20g)
  • A pinch of salt
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp cayenne pepper (to taste)

Tahini Sauce

  • 4 tbsp tahini
  • Juice of 1 small lemon
  • 1 tbsp rose harissa
  • Warm water (to adjust thickness)

Total preparation time: 15 minutes (after soaking chickpeas overnight) + 20 minutes cooking.


Awakening the Flavor Step by Step

Overnight Soak

Place chickpeas in a large bowl, sprinkle with baking soda, and submerge in water for 12 hours to awaken their rich, creamy potential.

Shaping the Chickpeas

  1. Pulse the chickpeas in a food processor until coarsely ground, then set aside.
  2. Add the onion, garlic, parsley, and cilantro, and blend until smooth.
  3. Return the chickpea mixture to the pan, add all ingredients, and pulse until smooth. Scrape the edges and rinse again to ensure even green color.
  4. Remove from the pan, cover, and refrigerate for 1 hour to set.

Blooming in the Heat

Heat oil in a pan over high heat. Shape the chickpeas or balls into patties and cook until golden brown, about 5 minutes on each side. Remove and drain on paper towels to absorb excess oil; they will be crispy and delicious.

Tahini Preparation

In a small bowl, whisk together sesame seeds, lemon juice, and harissa. Gradually add warm water until silky smooth.


Enjoying Variations and Tips

Hot tortillas filled with bell peppers and cucumbers; chilled quinoa salad with green vegetables—chickpea pancakes are a year-round treat. Adjust the spiciness to your liking, prepare your own sauce, and freeze the pancakes for up to a week to relive street food memories anytime.
